Rosé off-dry

Ingredients

• 400 gKing prawns, cleaned
• 1 pieceRed chili pepper
• 2 piecesOrganic limes
• 2 piecesGarlic cloves
• 1 cmFresh ginger
• 3 tbspOlive oil
• 1 tspLiquid honey
• 0,5 tspSea salt
• 0,3 tspBlack pepper
• 0,5 bunchFresh cilantro

Preparation

1. 1Rinse the shrimp under cold water and pat them thoroughly dry with paper towels.
2. 2Halve the chili pepper lengthwise, remove the seeds, and finely dice it.
3. 3Peel the garlic and ginger and finely grate or mince them.
4. 4Finely zest one lime, then juice both limes.
5. 5In a bowl, whisk together the lime juice, zest, olive oil, honey, chili, garlic, and ginger to create a marinade.
6. 6Toss the shrimp in the marinade and let them chill in the refrigerator for about 10 minutes.
7. 7Heat a pan over high heat and sear the shrimp with the marinade for 2 to 3 minutes on each side.
8. 8Season to taste with sea salt and pepper, and serve sprinkled with freshly chopped cilantro.
