Organic White Mulled Wine

Ingredients

• 250 gAll-purpose flour (Type 405)
• 20 mlVegetable oil
• 100 mlLukewarm water
• 1 pinchSalt
• 1 kgApples (tart, e.g., Boskoop)
• 80 gSugar
• 1 tspCinnamon
• 50 gRaisins
• 100 gBreadcrumbs
• 100 gButter
• 500 mlWhole milk
• 1 pieceVanilla bean
• 3 piecesEgg yolks
• 1 tspCornstarch

Preparation

1. 1Knead the flour, salt, water, and oil into a smooth, elastic dough, brush with oil, and let rest covered at room temperature for 30 minutes.
2. 2Peel and core the apples, slice thinly, and toss with sugar, cinnamon, and raisins.
3. 3In a pan, melt about 30g of butter and toast the breadcrumbs until golden brown.
4. 4Roll out the dough on a floured kitchen towel, then carefully stretch it paper-thin over the backs of your hands.
5. 5Sprinkle two-thirds of the dough with the toasted breadcrumbs, distribute the apple mixture evenly on top, and fold in the side edges.
6. 6Using the kitchen towel, carefully roll up the strudel and place it on a baking sheet. Brush with melted butter and bake at 180°C (356°F) for approx. 40 minutes.
7. 7For the sauce, bring the milk to a boil with the scraped seeds of the vanilla bean. Whisk the egg yolks with the remaining sugar and starch, stir in the hot milk, and heat while stirring constantly until the sauce thickens.
8. 8Dust the warm strudel with powdered sugar and serve alongside the creamy vanilla sauce.
